Cheese and Herb Bread

Ingredients

  • 1 teaspoon dry mustard powder
  • 1 tablespoon fresh parsley (chopped)
  • 1 teaspoon dried sage
  • 1/2 small red onion (finely chopped)
  • 1 cup strong cheddar cheese (grated)
  • 2 teaspoons sugar
  • 3 cups strong brown flour
  • 1 tablespoon sunflower oil
  • 1 teaspoon dry yeast
  • 1 teaspoon salt
  • 1 cup cool water

Method

Perfect for serving with soup.

  1. Place the ingredients into the baking tin starting with the liquid first.
  2. All ingredients should be at room temperature.
  3. Place the salt and sugar around the outside of the rest of the mixture.
  4. Add the yeast as the last ingredient in a small hollow in the flour.

Sun Dried Tomato Bread

Ingredients

3 1/3 cups (845ml)    fine white flour
2 tablespoons (30ml)   olive oil
2 teaspoons (10ml)   dry yeast
1/2 teaspoon (2.5ml)   salt
1 cup (260ml)    water (from soaking)

Method

  • Firstly soak the tomatoes in a small amount of hot water for 15mins.
  • Allow to cool to room temperature.
  • Drain the tomatoes, keeping the water for later, and chop them into small pieces.
  • You now have 2 choices: -
    1.  add the chopped tomatoes at the beginning of the program (this will give a blended flavour to the loaf)
    2.  add them mid-cycle which will result in pieces of tomato in the final loaf.
  • Use the water from soaking to give extra flavour.
  • Place the ingredients into the baking tin starting with the liquid first.
  • All ingredients should be at room temperature.
  • Sprinkle the salt around the outside of the rest of the mixture.
  • Add the yeast as the last ingredient in a small hollow in the flour.

Goat’s Cheese Bread

Ingredients

1 egg (beaten)
1 cup water
3 tablespoons honey
1 cup goats cheese (crumbled)
3 cups strong white flour
2 teaspoons dry yeast
1 teaspoon salt

Method

You can substitute the water with goats milk, for a really rich goats cheese flavour.

Place the ingredients into the baking tin starting with the liquid first.
All ingredients should be at room temperature.
Place the salt and honey around the outside of the rest of the mixture.
Add the yeast as the last ingredient in a small hollow in the flour.
Use the “basic” program on your bread machine.

Olive, Basil and Parmesan Loaf

Olive, Basil and Parmesan LoafPreparation Time: 10 Minutes
Cooking Time: Varies according to machine
Makes: 2 lb loaf

This is a great loaf to enjoy with pasta, grilled with a thin spread of salsa and more cheese sprinkled over the top or simply served with fresh vegetable soup.

 

    • 1½ cups tepid water
    • 3 tbsp skimmed milk powder
    • 3 tbsp olive oil
    • 2½ tbsp sugar
    • 2 tsp salt
    • 100g olives chopped roughly (mixture of stuffed green and pitted black olives)
    • 50g grated parmesan cheese
    • ½ cup chopped fresh basil leaves
    • 4 cups of strong white bread flour
    • 1½ tsp fast action yeast

Breadmaker setting: 1 Basic -

 

    1. Measure the ingredients into the pan in the order they are listed above. This ensures the best mixing and therefore the best result.
    2. Check the loaf size is set to 2lb and press start button.
    3. When the loaf is ready, remove the loaf tin using an oven glove.
    4. Transfer to a wire rack to cool. Serve in slices.
